Baking a Difference: Proof of Pie’s Recipe for Sustainability, Inclusivity and a Love for all things PIE!

In March 2024, Proof of Pie officially opened its doors within the cozy confines of the Joinery’s café space. However, the story of Proof of Pie (POP) is one that began long before this.

The journey started in 2015 when Lachlan and Susannah, along with their three children, embarked on a three-month adventure across the USA, sampling regional pies. Their travels took them to Chicago for authentic pumpkin pie, Pennsylvania for the distinct flavors of shoofly pie, Alabama for the rich sweetness of chess pie, and Louisiana for the classic pecan pie.

Lachlan’s passion for pies led him back to the States in 2019 for a solo research trip through the Midwest and South, where he further explored the art of pie-making. Following the challenges of the COVID-19 pandemic, Lachlan began his commercial pie-making venture by supplying pies to b3 Coffee in Blackwood. This modest beginning soon evolved into the launch of Proof of Pie at the Joinery in March 2024.

Beyond their delectable pies and coffee, POP has gained recognition as an environmentally conscious and eco-friendly café - having recently earned the certification of ‘Plastic Free Champions’ by Plastic Free SA. The team champions sustainability through their "ugly mug" system, which encourages customers to avoid single-use coffee cups. 

Susannah, a passionate crafter with talents in quilting, knitting, and sewing, has also added her touch to the café. She established a small retail space within POP, offering repurposed and handmade goods for purchase.

Inclusivity is at the heart of Proof of Pie. Lachlan and Susannah have thoughtfully designed their café to be a welcoming space for everyone, including those who are neurodiverse or hearing impaired. Instead of loud music and a cramped atmosphere, visitors will find a warm, calming and inviting environment where everyone is welcome. The couple is committed to making further accommodations wherever possible to ensure the café remains accessible to all.
